Weekends always seem like the perfect occasion for pancakes and last weekend was no exception. Ricotta pancakes are super fluffy, moist and decadent. I followed theKitchn‘s version and they left my Mr. concluding that, “From now on, everything should have Ricotta in it.”
Lady’s note: I substituted 1/4 cup of the 3/4 cup all-purpose flour with almond meal, giving it a nutty aroma.
